This book is designed as an OER text and learning resource for undergraduate students enrolled in FN 225 Nutrition at Lane Community College in Eugene, Oregon. The book covers basic nutrition and metabolism, information literacy, energy balance, nutrition across life stages, dietary supplements, an in-depth look at each of the macronutrients, and major functions of vitamins and minerals

COURSE DESCRIPTION: Nutrition is a study of how the body takes in and uses the nutrients from food. Food sources, functions, and requirements of the following are discussed: carbohydrates, proteins, fats, vitamins, minerals and water. In addition, digestion, absorption and metabolism of all nutrients are covered. Skills are developed for improving personal eating habits and for evaluating nutrition information in the mass media.

COURSE OBJECTIVES: Upon successful completion of this course, students will be able to:

Understand the symbiosis of life & make eating decisions to sustain health for ourselves and our earth's resources. This requires knowing what:
nutrients are in the foods we eat
purpose a nutrient serves a plant or animal we eat
a human body needs to do to that nutrient before it gets into our bloodstream
our body does with that nutrient
Evaluate a food's nutrient content by reading its food label.
Discuss current international, national and local issues surrounding food access, nutritional excesses and nutritional deficiencies and offer possible solutions.
Begin to apply scientific reasoning to evaluate the validity of nutrition information in media.
Evaluate dietary intakes using the Recommended Dietary Allowances, the Food Guide Pyramid, the Dietary Goals and the Dietary Guidelines and understand the limitations of their use.
Demonstrate that recommended nutrient intake levels can be obtained under varying levels of caloric intake and under varying economic, cultural and lifestyle conditions.
Recognize that nutrition is only one factor-- along with exercise, freedom from excessive stress, and rest-- in staying healthy.
Consider several sides of a nutrition issue, like vegetarianism or world hunger.
See connections between this class and others you might be taking or have taken.

Exploration of the connection between personal choices and health across multiple dimensions of wellness. Focus on personalized behavior change strategies to advance health. The purpose of this course is for adults to advance their personal health. People generally have a good sense about what to do to be healthy, but actually doing it consistently is another matter. Because of this challenge, behavior change theory is applied throughout this course to engage students and evoke health-related change. By the end of it, we want students to be healthier than they were at the start and we want them to have an understanding of how to continue advancing their health throughout their lives.

We have developed this open access book for universities and colleges responding to the needs and interests of students preparing for careers in health or even seeking to add a “health track” to their majors or minors. Para vivir offers an introduction to reading different literary and cultural texts from the Spanish-speaking world with a thematic focus on health. It can be used as an alternative to the standard Introduction to Hispanic Literature course texts, as it also teaches techniques of close reading. It incorporates authors from seventeen counties, has an almost even representation of male and female authors and diverse communities in the Hispanic world (European, Creole, Afro Hispanic, Latinx, Indigenous, Jewish). In addition to introductions to reading different genres (narrative, poetry, theater, and film) we have scaffolded supporting material such as biographies, notes on the historical contexts, pre and post-reading questions.

As part of the Hewlett Foundation grant for the African Health OER Network, Professor Ken Harley (University of KwaZulu-Natal) conducts an annual external evaluation of the project. For his 2009 evaluation, Prof Harley interviewed participants at Kwame Nkrumah University of Science and Technology (KNUST), University of Ghana (UG), University of Cape Town (UCT), University of the Western Cape (UWC), the South African Institute of Distance Education (Saide) and the University of Michigan (U-M). In 2010, he conducted follow-up interviews with the same institutions. The 2010 evaluation was aimed at exploring institutional experiences, to establish how the project was being consolidated, and to start assessing issues of sustainability. Based on document analysis and institutional interviews, broadly, the evaluation concludes that:The African Health OER Network has supported institutions to develop OER based on institutional needs and choices. This in itself is a signifier of sustainability.Because of the modelling of OER production along institutional needs and choices, institutions have produced OER that are consistent with their Ňethos, contextual realities, strategies and resources.Ó In other words, what is being produced will be utilised in the institution and is not designed for Ôshow and tellŐ to meet funder requirements. The development of OER has encouraged institutions to reconsider their policies on OER and also how they can support OER within their own means.
